This was one of my favorite dinners to eat as a kid, I'd put it requests for it often. Needless to say, I was pretty stoked to find a recipe for it in my trusty 1943 copy of the Joy of Cooking by Irma Rombauer. I think it would be a good camping recipe - since you don't really need to use forks or even plates to eat it up. I just skewer my cubes, instead of trying to get some kind of drumstick shape, which I found hilarious to imagine.
City Chicken (6 servings)
Cut into 1" x 1.5" pieces:
1 pound veal steak
1 pound pork steak
Sprinkle them with:
salt
pepper
Arrange the veal and pork cubes alternately on 6 skewers. Press the pieces close together into the shape of a drumstick. Roll the meat in:
flour
Beat:
1 egg
2 Tbsp water
Dip the sticks in the diluted egg then roll them in:
bread crumbs (I used more gluten-free flour)
Melt in a skillet:
1/4 cup shortening (I used butter)
Add:
1 Tbsp minced onion (optional)
Brown the meat well on all sides. Cover the bottom of the pot with boiling stock or water. Put a lid on the skillet and cook the meat over very hot heat until it is tender (5-10 minutes.) Thicken the gravy with:
Flour (2 Tbsp flour to 1 cup of liquid)

It must be really good if you requested it as a child, and still serve it as an adult. Thanks for another delicious vintage recipe.
OMG...memory flashback.
My Grandma made these ALOT. I thought it was a Polish thing. Haven't had them in over 19 years though, that's how long Grandma's been gone. :(
I think I'll copy your recipe, and maybe make them here.
