Pecan Drops - Vintage Recipe Thursday

We bought some beautiful (and fragrant) peaches at the farmer's market on Satuday, and I was going to post a peach cobbler recipe today but Joy beat me to it, haha!!

So, instead of the peach cobbler we're having for dessert, here's the recipe for the butter butter yum pecan cookies I made today to send Gramps in the mail - they keep & ship well. He's on a super high calorie healing diet right now, and for the next 10 weeks he can eat all the buttery artery-clogging goodness that he usually steers clear from. I'm not trying to kill him right after heart surgery, I swear!

Pecan Drops

This recipe is from the book "Favorite Recipes of Home Economics Teachers: Desserts Edition" ©1963 and was contributed by Fay Foster of Brownsboro HS in Brownsboro, TX.

Pecan Drops
(makes 4 dozen cookies)

1 C. pecans
1/2 C. butter or margarine
1/2 C. plus 2 Tablespoons shortening
1 C. confectioners sugar
2 1/2 C. sifted cake flour
2 teaspoons vanilla extract

Start your oven at 325˚F, or slow, and chop pecans rather coarsely. Cream butter or margarine and shortening together until smooth. Then beat in the confectioners' sugar gradually. Stir in the flour thoroughly and add vanilla extract and pecans. Mix well and drop by teaspoon on an ungreased baking sheet. Bake 15 to 20 minutes or until a delicate light brown.

Note: I added 3 Tbsp of water to this dough because it was too crumbly. You might have the same problem if you live in a dry climate too. Also, instead of 'dropping' them, I rolled the dough into balls with my hand, and smushed each down with my palm. I then decorated each cookie with one pecan half and baked as directed - they just turn out prettier that way.

Oh, I didn't mean to do that to you. It must be that great minds think alike. :-) In the future, don't feel you have to switch recipes. The exact ingredients and method are likely to be different.

That's interesting that your Gramps is on this wonderful diet. I'll bet he will be enjoying it while he can.
These cookies sound delicious.

I like the title of this cookbook. Seems like it would be full of tasty, well-tested, easy and fool-proof recipes.

Ooooh...I have a whole bag of still in the shell pecans that I have been wondering what to do with. This is perfect.
